  • Vineyard

    Vineyards from two areas in the region: Bocos de Duero, with deep gravel soil, and Moradillo de Roa y Pardilla, higher areas in the Ribera del Duero, over 900 metres above sea level, where cool breezes and reddish soils predominate with fiery and broken gravel.

     

    Elaboration

    The grapes are selected and harvested in the field in boxes with a maximum capacity of 17 kg.

    When the grapes arrive at Bodegas Raíz de Guzmán, a first selection is carried out for the bunches, and a second selection for the loose grapes.

    Then, fermentation and the post-fermentation maceration are carried out in trunco-conical tanks at a controlled temperature.

    Barrel ageing is 18 months, 90% French oak and 10% American oak.

     

    Visual phase: Rich cherry colour with garnet nuances of high intensity, bright and clean

    Olfactory phase: Elegant aromas, which are both complex and intense. Toasty tones that give way to ripe red fruit, smoky tones, nuts and fennel.

    Tasting phase: Structured and creamy With well-integrated and immersive tannins. With great personality, volume, unctuous and an infinite length.

    Recommendations

    • Pairing: dense stews, red meat, birds and ground game and strong-flavoured fish.
    • Serve at temperature: 16 – 18ºC.
