  • Elaboration

    We select and harvest the grapes from the vineyard in boxes with a maximum capacity of 17 kg. When they arrive at the winery, we carry out a double selection process: one on the bunches and another on the loose grapes.

    Fermentation and post-fermentation maceration are carried out in trunco-conical tanks at a controlled temperature. It is aged for 15 months, in French oak barrels (90%) and American oak (10%).

    Visual phase: Garnet red with dark cherry nuances, intense and bright. It moves in the glass with high density, giving away that it is a fatty and unctuous wine.

    Olfactory phase: Elegant aromas which are pleasant, clean, intense and complex on the nose. Highly complex aromas: earth minerals, leafy, cigar box, spices. When opened, red fruits and creamy aromas can be appreciated.

    Tasting phase: Great personality when tasted. With volume, unctuous and an infinite length. Great intensity ranging from sweets to marron glacé. Fatty, fine, long and lasting tannin. Evoking spices, balsams and liquorice roots. Very complete and very typical of Raíz.

    Recommendations

    • Pairing: roasts, all kinds of meats, oily and fatty fish.
    • Serve at temperature: 14 – 16ºC.
