Ya hemos explicado anteriormente la importancia del embotellado en el proceso de elaboración del vino. Teniendo en cuenta la complejidad de esta última fase, en la que hay que ser especialmente cuidadosos porque puede arruinar todos los pasos previos, en Bodegas Raíz de Guzmán se ha procedido al embotellado de Raíz Crianza 2014.
Ignacio Figueroa, reputado enólogo de la bodega de la Ribera del Duero, explica los pasos previos al embotellado del crianza: “Hacemos una cata de todos los vinos en barrica con más de 14 meses de maduración”.
Estos vinos están clasificados en base a las tonelerías, la edad de cada barrica y la procedencia de las bayas. Bodegas Raíz tiene parcelas en diferentes terrenos de la zona en busca de uvas con diferentes matices, aunque siempre de variedad tempranillo, para que el resultado sea un vino hecho al 100% con este tipo de uva y con Denominación de Origen Ribera del Duero.
“Hacemos una cata y ensamblaje de más de 60 muestras hasta que se origine nuestro vino Raíz Crianza 2014”. Para el embotellado, se emplean materiales de primera calidad, desde el vidrio hasta el corcho. Después, “el vino permanecerá más de un año en botella, hasta conseguir su afinado”.
